Rice for Breakfast

There are lots of great ways to use up leftover rice. Turning it into fried rice is a tried and true favorite around here. Especially since it really does turn out better if you make fried rice with cold rice.
But what if you only have a cup of rice left? Here's a great breakfast recipe to use up just a little bit of rice. It's sweet though so be sure you don't use rice that's been cooked in chicken broth, or with other spicy or savory flavors.

Brown Rice Pancakes
4 eggs
1/4 cup buttermilk
2 T melted butter
1 t vanilla
1 cup cooked brown rice
1/2 cup whole wheat flour
1 T sugar
1/2 t salt
1/2 t nutmeg
1 t cinnamon

Beat eggs (For especially light textures separate and beat the egg whites, folding them in at the end, before the rest period) together with butter, milk, and extract. Add rice. Combine remaining ingredients and stir into the wet ingredients. Let rest for 10 minutes before cooking on a hot griddle or skillet.

These are great, and reminiscent of rice pudding, with this simple raisin sauce.
3/4 cup apple juice
3/4 cup raisins
1/4 cup sugar
cinnamon stick
6 whole cloves
1 T apple juice or rum
2 t cornstarch
2 T butter
Combine the first 5 ingredients in a sauce pan and cook over medium heat for 10 minutes. Combine the bit of apple juice and cornstarch and whisk into raisins. Cook a few minutes until thick. Remove from heat and stir in butter until it melts.

You can experiment with any leftover grain in this recipe, millet, oatmeal, quinoa, etc.
